Easy Whole Wheat Buttermilk Biscuits

Serves: 6-10 biscuits depending on the size of your cutter
 
Ingredients
  • 2 cups whole wheat pastry flour or white whole wheat flour (I used Trader Joe's White Whole wheat flour, King Arthur White Whole Wheat Flour or Bob's Red Mill Ivory Wheat Flour are also good)
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 4 tablespoons (half a stick) cold unsalted butter
  • 1 cup low fat buttermilk
Instructions
  1. Preheat oven to 450 degrees Fahrenheit.
  2. In a large bowl combine flour, baking powder, baking soda, and salt. Mix well with whisk or fork.
  3. Cut the butter into small pieces and add to the flour mixture.
  4. Using a fork, pastry cutter, or your fingers, mash the butter pieces with the flour until the mixture resembles pea sized coarse crumbles.
  5. Then pour in the buttermilk and mix until the dough just comes together. Pour the dough onto a floured cutting board. Gently knead and combine the dough with your hands then pat the dough out flat to about ¾-inch thickness.
  6. Use a round cookie cutter or the top of a drinking glass to cut out biscuit rounds. Put the rounds on an ungreased cookie sheet (I like to line mine with parchment or a silicone mat) and bake for 10 – 12 minutes or until lightly browned.
