Best Ever White Chocolate Cranberry Cookies

Buttery, chewy, and utterly addictive.
Ingredients
  • 1 cup (2 sticks) softened butter
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract (*Not in Lisa's original recipe, but my own addition I never leave out)
  • 2 cups old fashioned oats
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups dried cranberries
  • 1 cup chopped white chocolate or white chocolate chips
Instructions
  1. Using an electric mixer, beat butter and sugar until creamy. Add eggs and vanilla extract (if using) and mix until well combined.
  2. Add dry ingredients, mixing until dough just comes together.
  3. Stir in cranberries and white chocolate with a spatula.
  4. Drop by the tablespoonful (I use a small cookie scoop) onto an ungreased cookie sheet (I use silicon baking mats or parchment paper).
  5. Bake 10-12 minutes at 375°F until edges of cookies are slightly golden. For best results, don't over bake. The center of the cookies may look slightly underdone when you take them out of the oven.
